Anyone who’s followed my journey over the years knows I have struggled with food. I love all kinds of food but not all kinds of food love me back, all the time like I would like them to. This for me is a foray back into my old blogging style in many ways. I stopped eating avocados in general when I had the copper IUD, a crazy story for another day because of copper poisoning which was made worse with the high copper content naturally contained within avocados.
But Im excited to say those days are behind me now and I’ve been celebrating with my favorite guacamole recipe, in fact the ONLY guacamole recipe I actually enjoy. I serve this with homemade tortilla chips made from corn tortillas con nopal, which is literally cactus infused tortillas.
Ingredients:
3 avocados, fresh
1/2 medium purple onion (ITS PURPLE OK, NOT RED. WILL DIE ON THIS HILL)
1/2 chopped yellow bell pepper
1 medium roma style tomato, chopped
1 key lime
salt to taste
Process:
Start with avocados, cut in half, remove the pit and spoon into a bowl. Mash them before adding anything else. Technique is half the battle here, guys.
Chop the onion, tomato, and bell pepper, add to the bowl with the avocado. Squeeze lemon juice on top, add some salt and stir. Taste the guac, if it tastes a little bland, add more salt.
That’s literally it. Don’t come at me for lack of spice, too much spice makes it so you cant taste the individual components of the guac which for me is where the magic is.
